Summer Tuna penne Salad

1lb penne pasta
4 Tablespoons of Olive oil
1 small red onion chopped
2 tablespoons capers
1 whole roasted red pepper sliced and deseeded
or you can use 4-5 sections of red roasted peppers from a jar.


Cook pasta as per directions on box. Drain in colander and rinse quickly under cold water to cool. Drain well. place into large bowl. Mix n the olive oil to coat the pasta. Let cool.

In another bowl add the lemon juice, parsley, the capers, roasted red pepper and celery. Season with salt and pepper.

To the cooked pasta add the tuna and red onion. Carefully mix in the beans. With a slotted spoon mix in the lemon juice mixture to coat the pasta. Let the pasta sit for at least1/2 hour.
